      【摘要】 目的 研究山梨酸钾的毒性,评价其安全性。方法 按照GB15193.1-21《食品安全性毒理学评价
程序》的方法对山梨酸钾的毒性级别、遗传毒性等进行安全性评价。结果 山梨酸钾对小鼠急性毒性实验LD50=
1 300 mg/kg,属低毒级;通过骨髓细胞微核试验、小鼠精子畸形试验、传统致畸试验,发现山梨酸钾无遗传毒性;
30 d喂养试验对动物体重、血液常规及血清ALT、BUN、GLU、TC、TG均未有明显毒性作用(P>0.05)。结论
梨酸钾是一种安全、相对无毒的食品添加剂,可用于各类食品及饮料中。

br>Study on the toxicity of potassium sorbate.

【Abstract】 Objective To investigate the general toxicity of potassium sorbate, and evaluate its security.
Methods According to the standards of the People’s Republic of China“Procedures and Methods for Toxicological
Assessment on Food Safety”(GB15193.1-21), the toxic level, hereditary toxicity, long-term toxicity and security of
potassium sorbate were evaluated. Results The LD50 of potassium sorbate was 1 300 mg/kg, which belongs to
low-toxic degree. In bone marrow cell micronucleus, mice sperm abnormality test, teratogenicity study, thirty days
feeding study, there were no genetic toxicity and dramatically changes between the experimental groups and the con-
trol group for body weight, blood routine examination, and the respective levels of ALT, BUN, GLU, and TC, TG in
serum (P>0.05). Conclusion Potassium sorbate is a kind of safe, non-toxic additive for food, which could be used in
kinds of food and beverage.
